FAQ
- The Maillard reaction is a chemical reaction between amino acids and reducing sugars that gives cooked foods their distinctive flavor. It is responsible for the browning of foods such as bread, toast, and the golden-brown crusts of pastries. The reaction is also responsible for the flavor of roasted coffee and the deep brown color of chocolate and beer. The reaction is named after the French chemist Louis-Camille Maillard, who first described it in 1912.
